Accelerated aging of whisky using packed bed bioreactor
Description: In the business year of 2014 - 2015 whisky sales in Ontario alone were estimated to top $623 million with a projected growth of 2.3 per cent the bulk of which to be produced domestically. With such a hopeful future for the industry the demand for whisky related technologies will grow in order to meet market demands. Current techniques used by industry are dated and traditional, the few recent innovations have been limited to bottling and packaging. After distillation, whisky is often aged in wooden casks for a period of around 4 months up to 16 years in order to draw out flavours of the hardwood as ?to enhance the beverages flavour palate. The aging process is crucial to whisky production as it is necessary in producing its characteristic taste. As whisky's age their associated value increases and are seen as a more valuable product. Costs associated with aging whisky can be attributed to a large portion of the cost in producing whiskies, both time and hardwood barrels play into the cost. As such there exists a potential for new technologies to offset the costs associated with the aging of whiskies by producing a system by which to accelerate the aging process and use an alternative to expensive hardwood barrels.
